These treats are great for a BBQ or a pool party! Whatever the summer event, you can rest assured that these bucket pudding desserts won’t ever disappoint. They’re creamy and crunchy, and the cake stays soft and moist. It’s balanced in texture AND delicious.
Ingredients You’ll Need
Only simple and easy-to-find ingredients are used in this recipe for sand dessert. The umbrellas and buckets can be ordered online or you can check out your local dollar store.
- White Cake Mix: Any brand will do!
- Water, Oil, and Eggs: Whatever amounts the box of cake mix calls for.
- Lemon Juice
- Blue Sprinkles
- Cheesecake Instant Pudding: feel free to use vanilla pudding.
- Cold Milk: This is for the pudding layer.
- Blue Food Coloring: Liquid or gel will work.
- Vanilla Wafers: crushed with a mini food processor.
- Teddy Grahams
- Rainbow Stripe Candy: This must be cut to the size of the teddy graham.
- Paper Drink Umbrellas
- Clear Sand Buckets – or plastic cups.
How to Make Sand Pudding Cups
These sand cups are easier than ever to make! Once the cake is baked, all you have to do is layer the dessert and it’s ready to eat in an hour!
- Prep the Oven. The first step is making the cake. Preheat your oven to 350 degrees F.
- Mix the Batter. Combine cake mix, water, oil, and eggs in a large bowl. Use the exact measurements on the box of cake mix that you buy.
- Add Extras. Stir the lemon juice and blue sprinkles into the cake batter.
- Bake. Spray a 9×13 baking dish with non-stick cooking spray and pour in the batter. Bake for about 45 minutes or until a toothpick comes out clean.
- Cool and Cut. Allow the cake to cool a few minutes so it is easier to handle and then cut it into bite-size squares.
- Make Pudding. In a medium bowl, whisk the cheesecake pudding mix with the cold milk. Then, stir in the blue food coloring. Add a couple of drops at a time until you get the shade of blue you want.
- Prep the Buckets. Divide the cake squares into buckets and then top each with the pudding layer. Then, sprinkle the vanilla wafer crumbs evenly on the top. Decorate with the “blanket” candy, a teddy bear graham, and one paper umbrella.
- Chill and Serve. Refrigerate for at least 1 hour so the pudding is soft set. Then you can enjoy your beachy treats!
Tips and Variations
- Cookies: I use vanilla wafers for this recipe but you can use any kind of crushed cookies like! Some great ideas are shortbread cookies golden Oreos and graham crackers.
- Pudding: The tang of the cheesecake pudding pairs so well with the lemon juice. For more citrus, you can use lemon pudding mix instead. Try vanilla, too!
- Lemon: Don’t like lemon? Leave it out of the cake and just make the white cake as is.
- Blankets: Use fruit rollups in place of the rainbow stripe candy if you prefer.
- Storage: You can store leftover sand cups in the refrigerator for up to 3 days.

Ingredients
Cake
- 1 15.25 box white cake mix
- Water, Oil and Eggs from Box Mix
- 1 Lemon juiced
- 1 1/2 tablespoons blue sprinkles
Pudding
- 2 3.4 oz boxes instant cheesecake pudding
- 4 cups cold milk
- blue food coloring
Sand
- 1 1/2 cups crushed vanilla wafer cookies
Instructions
Cake
- Preheat oven to 350 degrees F
- In a large bowl combine the cake mix and the water, oil and eggs the box calls for.
- Add the juice of one lemon and sprinkles to the cake mix.
- Pour the cake batter into a prepared 9×13 baking dish.
- Bake for 45 minutes or until a toothpick inserted comes out clean.
- Cool completely on a wire rack. Slice into bite size squares.
Pudding
- Combine the cheesecake pudding mix with the milk and whisk.
- Add in the blue food coloring until you get your desired shade of blue.
Assembly
- Into your buckets divide the cake squares into each of the 10 buckets.
- Next top each one with the blue pudding.
- Top each one evenly with the vanilla wafer crumbs.
- Decorate the top of each one with an umbrella, 2 teddy graham and a little beach blanket cut out of the rainbow stripe candy.
- Refrigerate for 1 hour.
